This one skillet pasta dinner has been one of my most popular posts on Instagram. It was shared on Instagram’s main page and currently has over 45k views! This is one of my favorite weeknight dinners – ready in 20 minutes! I pretty much make this once a week it’s that good!
I start with chicken sausage – if you haven’t seen Al Fresco Brand chicken Italian sausage – look for it near the deli meat/hot dogs at your local grocery store. They are fully cooked and for 1/3 of a link – only 2 Smart Points on Team Purple if you are following www.weightwatchers.com like me.
In a large skillet, I add the sliced chicken sausage, let it brown for a few minutes. Then I add 2 1/2 cups water, 1 tablespoon chicken bouillon seasoning, one 8 oz. can tomato sauce and 6 oz. whole wheat pasta.
Stir everything together, add Italian seasoning, a little salt and pepper and crushed red pepper flakes. Bring to a boil, then cover and turn to low and cook for 10-12 minutes until the pasta is done. Stir a few times just to make sure it doesn’t stick.
A month ago, Weight Watchers introduced new plans to follow – there is the blue plan, the green plan and the purple plan. I chose purple because whole grains are now zero points! (whole wheat pasta, quinoa, potatoes, etc).
For this recipe, the pasta is zero points, I counted 4 smart points for the chicken sausage and the sauce is zero points. So good! I’ve done this using fresh tortellini too – and that’s a super quick weeknight dinner too!
