I made these muffins this morning before work. It only took a few minutes to put the batter together, and you don’t need a lot of ingredients, and the oven does most of the work!
- 3 bananas, mashed
- 1 cup sugar
- 3 tb. butter, melted
- 2 tablespoons ground flax seed (optional)
- 1/4 cup mini chocolate chips
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 tsp. vanilla extract
- 1 1/2 cups all purpose flour (or you could use half whole wheat/half all purpose)
I just threw all the ingredients in a bowl, got out my hand mixer, mixed it for a few minutes until it was smooth. Makes 12 muffins, I used muffin liners, otherwise you could spray the muffin pan with Pam so they won’t stick. I didn’t figure out the calories until after I made them, but was surprised that each muffin is 198 calories, 4.5 grams of fat and 1.5 grams of fiber. Not bad! I might try to make them next time with yogurt or applesauce in place of the butter and see how that comes out. They were moist, chocolaty, flecked with the flax meal and totally fantastic. Maybe you can whip up a batch this weekend!
Have you tried substituting cauliflower for the banana? It’s awesome. Tastes just the same!!!
how long do you cook them and at what temperature???
Hi! Sorry about that. I bake regular size muffins at 350 degrees for 12 minutes.
For jumbo muffins (where it makes 6 muffins) it’s 350 degrees for 16 minutes
If I am making mini muffins (24 to a pan) it’s more like 8 minutes at 350 degrees.
