These were the muffins I pictured yesterday and I promised to post the recipe today, so here it is. I used a lot of the new different kinds of flours I bought yesterday and came up with a really tasty healthy muffin!
1/2 cup all purpose flour
1/2 cup oat flour
1/2 cup quinoa flour
1/2 cup whole wheat pastry flour
2 TB. ground flax seed
1/2 cup sugar
2 tsp. baking powder
1/2 tsp. salt
3 medium bananas, mashed
1/2 cup skim milk
1 large egg
2 TB. canola oil
squirt of honey
2 TB. chocolate chips…(all I had left were X-mas colored chips, red and green!)
Basically, I mixed up the dry ingredients, added the wet ingredients and stirred with a spatula. At first it will seem like there is not enough liquid, but stirring a few times, the bananas will moisten and everything will be incorporated. Just don’t over mix it, because with all the different flours in it, I didn’t want to risk it becoming gummy.
Bake at 350 for about 15-17 minutes, or until a toothpick comes out clean
It makes 12 muffins and each muffin is 164 calories, 4.3 grams of fat and 2.4 grams of fiber!
Now on to dinner. I knew I was going to make meatballs and pasta with my own sauce. I made it differently than I have done before and it was my best one yet!
For the meatballs, I used about 3/4 of a pound of ground sirloin beef. You can use any kind of ground beef. I didn’t have any bread crumbs, so I added about 1/2 a cup of oatmeal + 1/4 ground flax seed into my magic bullet and pulsed it so it was really fine. I chopped up some garlic, added some salt and pepper and 1 egg. Mix with your hands and I made kind of smallish meatballs, mine were a about .75 ounces each. I cooked the meatballs in a skillet just to brown and then added them to the sauce to finish cooking
For the sauce, I also did something different. In a large pot I added 1 zucchini, 1 green pepper, 1 small onion (which I pureed all of them in my magic bullet until it was liquid). I cooked that for a few minutes. Then I added, 1 28 oz. can of crushed tomatoes, 3 roma tomatoes (also pureed) and 3 small cans of tomato sauce. I added a little parmesan cheese, salt, pepper, red pepper flakes, and oregano and cooked it for about 30 minutes.
This was the outcome. It was so fantastic. And I loved that I added some more veggies into it and no one knew! I will be making this one again for sure!
