My waffle maker made a rare appearance this weekend! I haven’t used it in probably 6 months. I was reminded of a recipe I made last year, and it didn’t disappoint.
This recipe is adapted from Spark People
I ended up sauteing a banana in about 2 tsp. of sugar to make a nice carmelized bananas, so you don’t even need syrup.
Ingredients
2 cups quick oats
2 teaspoons baking powder
1 egg
2 T vegetable oil (optional)
1 1/4 cups milk
1/4 cup ground flax seed
2 TB. mini chocolate chips (what a surprise, right?)

Protein: 6.3g
Put oatmeal in the blender and blend in high speed till the oatmeal resembles corse flour add baking powder and mix then add oil, egg and milk. blend only for a short while till mixed. if batter too thick add milk a little at at time stir in with a spoon. Pour about 1/4 cup of waffle batter into the waffle maker and cook for about 3 minutes.
Number of Servings: 8
So good!!! I made a double batch so I could just pop the leftovers in my freezer for a quick breakfast when I am in a hurry!
