There is a number of food bloggers who participate in a kind of cook off where each week there is a host, and they pick the secret ingredient, and you can submit a recipe for a small prize. I’ve always read from afar and never entered before, but this week I decided to give it a try!
My sister has entered a number of times, the last host was Christina, and this week its turned over to her boyfriends brother who just started a new blog.
This weeks ingredient is eggs, so I knew I could come up with something!
I stated out with these eggs. They were on sale and less than the regular eggs, so I decided to pick them up. I’m not sure how they have omega-3’s in them, but I figured they looked healthier than the others, so I put them in my cart!
Ingredients:
1 egg, 2 egg whites
.5 ounce swiss cheese
1/4 red onion
splash of skim milk
1/4 tsp. chili powder
2 ounces cajun deli turkey
8 wonton wrapper, cut in half
I always seem to have leftover won ton wrappers, so I decided they were going to be the base of my mini quiches. I put all the ingredients (except the won tons) in my Magic Bullet and pulsed everything together until all the ingredients were incorporated. In my mini muffin pan, I sprayed that with Pam cooking spray, and then laid the 16 won ton wrappers into each muffin part. Then, using a tablespoon, I just poured the egg mixture on top of the won ton wrappers. Bake at 350 degrees for about 12 minutes or until the eggs look set.
This is how they turned out! They tasted amazing. The best part is, this whole recipe (for all 16 mini quiche is only 380 calories, and 8 grams of fat!
You could make more of these for a great appetizer for a party, you could make many variations such as spinach and feta cheese, sausage and cheddar cheese, green onion and ham, the sky is the limit!
My only suggestion is to make sure the pan is well coated with cooking spray. Most of them came out easily, but a few stuck to the bottom and were harder to get out of the pan. Either way, it was a totally deluxe breakfast!
