Lots of errands today! So, I haven’t spent much time in the kitchen. Right now I am planning out my meals for next week, and go to the grocery store later.
One thing I am excited about making for dinner tomorrow is a Mexican soup called Pozole. Has anyone made it before?
It’s kind of a long process, although mostly its cooking the meat on very low heat for several hours until tender. I can’t wait to see how it turns out!

My daughter Claire is the 2nd in from the left in the purple bandana. She’s in 2nd grade and has a GREAT group of core friends. They’ve been best buddies since preschool!
The square dance was for the whole family, so my sons weren’t that thrilled with going, but they were good sports about it!

I have never made Pozole but a good friend of mine, whom I used to work with, made THE BEST Pozole. She would sometimes bring leftovers and share with me… Sooo good. Brings back memories…

How cute! that’s awesome she has such wonderful friends – i’m still close with many of the girls I went to school with in kindergarten on up – love it! That soup sounds GOOD – looking forward to hearing about it.
