One of my favorite things to do is try to put together a great dinner when it seems like we have nothing in the house. Such was the case the other night. I hadn’t gone to the grocery store over the weekend, so while I was at work, I was trying to think of what I could put together that would be yummy, thus this dish was born…
Ingredients:
3 boneless, skinless chicken breasts, cut into chunks
2 cans green beans, drained
2 cups cooked rice
2-3 TB. prepared pesto
1-2 oz. feta cheese
In a large pot, cook the rice according to directions and set aside. Meanwhile, in a skillet, brown the chicken until it’s cooked through. Heat up the green beans in the microwave. To assemble, everyone took a bowl, put some rice in, some pesto, the chicken and green beans and sprinkle feta cheese over the top. Stir to incorporate all the ingredients and eat!
It turned out surprisingly good! No leftovers of this meal, so I may have to put this into rotation again!
Great idea – I always forget to use pesto with anything other than pasta, but it goes so well with other dishes, too!

What a delicious idea! I never know what to do with the rest of my pesto after using just a couple of tablespoons. And better yet, we always have these items around the house.
What timing! I just made some pesto and was wondering what to do with it since I don’t really like it on pasta (I’m actually not a huge pesto fan but didn’t know how else to use up all the basil I had). I will have to try this!
