There are two magazines I get in the mail each month that makes me feel like its Christmas. The first one is Cooking Light magazine, and the second one is Bon Appetit. I usually don’t make a lot of things from Bon Appetit because they either use a ton of ingredients, look super time consuming, or too hard, or are not very good for my weight loss efforts. When I received this months magazine, I saw this recipe which reminded me of a recipe I posted for white chocolate corn muffins that was fantastic, and this one was just as good. I did do a few substitutions. It called for whole milk, I used skim. It called for 2 eggs, I used 1 egg and two egg whites. I lessened the amount of oil and it still came out great. I also figured out the calories using www.calorieking.com. So, I am happy to say, this can fit into anyone’s weight loss plans! (as long as you don’t eat the whole loaf!)
Chocolate Chip Cornbread
- 1 1/4 cups all purpose flour
- 3/4 cup cornmeal (you can buy this right by the flour in the grocery store)
- 1/4 cup sugar
- 2 tsp. baking powder
- 1/4 tsp. salt
- 1/2 cup semi-sweet chocolate chips
- 1 cup skim milk
- 1/4 cup canola oil
- 1 egg, 2 egg whites
- squeeze of honey (maybe a tablespoon or two)
Preheat oven to 375 degrees. Spray a 9x5x3 inch metal pan (standard loaf pan) with cooking spray. Whisk flour, cornmeal, sugar, baking powder and salt in a bowl. In a separate bowl, whisk the wet ingredients, milk , canola oil, and eggs. Add the wet ingredients to the dry ingredients and stir until blended. Stir in chocolate chips. Pour in the prepared loaf pan and cook about 35 minutes, or until a toothpick comes out clean. Cool 10 minutes and invert onto a cooling rack. It makes 10 servings.

- 7 grams fat
- 1.28 grams of fiber
So, I was glad I took the time to figure out the nutritional information! Sometimes I think I can’t have something because it seems to rich or too many calories. But its nice to be able to make things that taste totally deluxe and that you can fit into any healthy eating plan!
