My husband and I had our weekly training for the Christy Clinic Illinois Marathon and Half marathon on Saturday and we’ve noticed a trend. It will be super mild during the week high 30’s and 40’s but EVERY Friday night we’ll be watching the news and the weather person says “ARCTIC AIR COMING IN” and sure enough it will be in the teens with windy conditions!
So as we were going to bed Friday night – I was thinking “please let it be sunny!” At least if it’s super cold having the sun does help!
It was super cold and WINDY! At some points I just walked because it almost took your breath away. I finished 8 miles and despite having to watch out for icy patches on the path – I felt pretty good! Next weekend we have a cut back, running 90 minutes, then the following week I have to do 10 miles. I hope in a few weeks it will be warmer out!
We train on the Chicago Lakefront path. We start running north first about 1.5 miles then go south. I love going north first because it is right by the water – even though it is so cold out I think it still looks pretty!
I mentioned last week I couldn’t find the cord to my camera. Turns out in the box it came in there is an adapter so I can just take the chip out of my camera and put that in my computer and download pics – so I have lots of recipes to share – one of which is a dinner that has been requested several times since I made it. Creamy noodle and chicken.
Serves 8
4 cups uncooked macaroni
1 tablespoon butter
3.5 cups chicken broth or skim milk (sometimes I’ll do both)
1/4 cup flour
3-4 chicken breasts cut into bite size pieces
chopped green onions for garnish
salt and pepper to taste
In a large skillet add the cut up chicken pieces and a little Pam cooking spray. Cook until almost cooked through – and transfer to a plate. At the same time cook the macaroni and drain.
In the same skillet, melt the butter and add the flour. Stir constantly on medium heat for 1 minute. Add the milk or chicken broth and stir often it will form a nice thickened sauce. Generously add pepper and a little salt. Throw the cooked chicken back into the sauce. Then add the cooked noodles and stir so everything is coated. Sprinkle with a little Parmesan cheese and the green onions. It’s so good! My whole family loves it.

I know how you feel on having crappy weather for the weekend long run – we finally had a decent day for running club – after three weeks in a row of bad weather. Sure makes you appreciate it! You are doing fantastic with the training! Hoo boy, 10 miles coming up? That is a milestone length!
