It’s the time during the school year where there are conferences, plays, and music concerts that makes working full time, getting a healthy meal on the table in a jiffy really hard.
Yesterday was that kind of day. My husband and I ran to one conference during lunch, and the other one was at 6:00 p.m. I was thinking what I could make that would be healthy and quick.
What if I put frozen chicken breasts in a crock pot with a packet and a half of fajita seasoning mix? I also added 1/4 cup of water.
By the time I got home, I just shredded the chicken and sauteed the peppers in a separate skillet. I didn’t want to add the peppers to the crock pot because I thought they would get too mushy.
They turned out great!

I need to try this – I tried a chicken fajita crock pot recipe once last year and it was blegh – dry chicken, mushy peppers – just not awesome! This looks great though!
