This recipe couldn’t be easier!
What you need:
3 chicken breasts, boneless and skinless
rub(recipe to follow)
1 jar of your favorite salsa
fixins to go with the chicken: tortillas, lettuce, cheese, black beans, hot sauce, etc…
My rub was 1 TB. chili powder 1 TB. cumin, 1 tsp. salt, 1 tsp. pepper and 1 tsp. sugar, 1 tsp. garlic powder. Rub that all over the chicken.
Next, place that chicken in the bottom of your crock pot (FYI I have also used frozen chicken too and that works as well!).
Add the jar of salsa, turn the crock pot on and cook on low all day.
When you get home, the chicken will just fall apart.
And serve with your favorite fixins!
It was so good!! I love easy dinners like that after a long day at work!

No onto getting back to basics. I’ve been reading a lot of common themes across the blog world right now. People who are trying to lose weight are upping their efforts RIGHT NOW, not waiting until January to get going again. My sister is doing it, Helen is doing it, and I am going to do it to.
So, for now I am counting points again. Not officially going to meetings, I went to weight watchers long enough and even worked there after making goal, so I know what to do. For those of you who don’t know, in 1999/2000 my sister and I did weight watchers and I lost 65 pounds to get to my lowest adult weight of 132. I kept between that and 140 for about a year before getting pregnant with my third child, my awesome daughter Claire, but in the process I gained it all back! Luckily I’ve lost some of that, but in order to really get to my goal I know this has to be an every day priority.
I know what works, and one thing is writing down what I eat. You can’t lose weight if you don’t know what’s going into your body. Now I don’t just have any notebook to write down what I am eating, I jazz it up!
And, I have stickers too, to put in it when I stay on track. I get them from a local parent/teacher store. They say “Great job” “Awesome”, “Super”.
This quote is going to be my mantra:
Decide what you want, decide what you are willing to exchange for it, establish your priorities and get to work.
So, who’s with me? Let’s make the last 2 months great and be way ahead of the game once January comes!!
Hurray! You can do it Jenn and you know I’m rooting for you!
I have some of my mantras on my refrigerator and see them first thing in the morning and last thing before I go to bed.
Those chicken tacos look so yummy. Why did I never think of that?
I make a simialr taco chicken, but I add a taco seasoning mix, 1/2 cup water and some cilantro when I have it.
I use it on pizza as well – yum.
I’m with you!!! And I’m tracking!
LOVE the notebook!!!
Love how easy that recipe is. I am on WW now. Writing it all down is really the key. Did you hear WW is changing the plan after Thanksgiving? They are going to take into account protein, carbohydrate, fiber and fat. No more slider and all points are being recalculated. Should be interesting to see how it all works out. Honestly I could use the change, I know how to work the system a little too well right now. And I am totally with you!
Will be cheering for you 🙂
Just an FYI, I read somewhere, think maybe Kath’s blog, that you shouldn’t put frozen meat in the crock pot…something about the meat staying at a dangerous temp for too long, but not sure of the validity of this… 🙂
That chicken looks so good! I’m going to have to try it. I love cooking in my crock pot.
I’m not waiting until Jan for my weight loss journey to begin. I know that the holidays will be hard, but there’s no use putting it off 2 months, when I know I need to start now.
