I forgot how much I liked these muffins until I made them again last night. For most Weight Watchers they are familiar with making muffins this way. Basically you take any muffin mix (the one I used was 170 calories for 1 cupcake, mix only) and add 1 can of diet coke. You don’t have to add any oil, eggs, water or anything else, just the mix and diet coke. For variations, you could use a white cake mix, or yellow cake mix and add a can of diet 7-up. Or you could take a chocolate mix and add a can of diet Dr. Pepper or diet root beer. The best part is the muffins come out so moist, its like eating cake!I started with the mix…..Then I started adding the Diet Coke….The batter gets all foamy…..And more foamy….Once you are finished mixing it, it looks like this…. If you want, you could add a few chocolate chips on top…I’ve had friends make birthday cakes this way too. Just add the can of diet pop and make it in a 9 x 13 inch pan. After it is cooled, you could sprinkle powdered sugar on top. It’s a guilt-free way of celebrating someone’s birthday. My kids loved these muffins, I only have a few left!
