I’ve done a few things differently as I mark the first week of trying to consume 10-13 servings of fruits and vegetables a day. I’ve noticed a few patterns here:
*I’ve had almost no snacks. Just breakfast, lunch and dinner
*I’ve had NOTHING after dinner which is huge, not because I am trying not to, its just I haven’t been hungry.
*I’ve had a cup of coffee every day this week. For those of you who know me, up until last fall I’d NEVER had a cup of coffee!! So, after 41 years of no coffee, I’ve had a cup every day. Not plain, not with sugar and that powdered milk stuff, I’ve added a packet of Swiss Miss Diet Hot Chocolate to the coffee, and I LOVE IT!! I wonder if the caffeine could also be curbing my appetite??
*Not had any extra food at work. No candy, no leftover pizza from luncheons…NADA!!

Whatever I am doing, its working. My weigh in is on Friday, and I’m excited to see what it says!
So, without further ado…
I had cheesy Quinoa for breakfast today. It was 1 cup quinoa, 1 oz. of mexican blend shredded cheese, some salsa, a little hot sauce and a “fried” egg (“fried” in Pam cooking spray).
395 calories, 19 grams of fat and 22 grams of protein. I loved this so much it made me super happy!
I pushed back my lunch until like 2:00, because I was invited to listen to a webinar sponsored by Kellogg’s food about the importance of eating fiber. I’ll talk more about that at a later time, but it started at noon, so while I listened I had a banana with some mango chunks.
By 2 o’clock I still wasn’t that hungry, but I ate about 1/2 of another stir fry with leftover veggies from last nights salad.
Dinner was disgusting! I haven’t done a whole weeks shopping since my car is in the shop, and I tried to heat up leftover frozen baked mostacolli. It was super dry, and the noodles were super mushy. I had about 2 bites and that’s all I could take. So, instead I had a bowl of cereal! My kids had other leftovers they were happy about, so it all turned out ok in the end.

I need to try quinoa for breakfast. I love how filling it is, so that would be great to start the day w/. My cousin went to school for marine biology and I think also has her degree in environmental science? But anyways, she has done two programs in Costa Rica w/ sea turtles and said that they have this morning drink that is ground up quinoa, strawberries and I think yogurt? So I wonder if South American countries where quinoa is native have a lot of traditional breakfast foods w/ this!?
Wow! You are doing fabulous, and I don’t think it’s the caffeine that is curbing your appetite but rather all the healthy food you are eating!

Note: In the past, all my successful losses of note (ie, 20+ pounds) occurred when I hit the 10 to 11 fruits/veggies a day mark. That’s the only way I could be filled up, as i have a huge appetite. The bulk of produce is what works for me (and journaling), but I get lazy about produce shopping, chopping, cooking and journaling, and off I go. I hate that persistence eludes me, even when I know what works.

I would love to try Bolthouse. I haven’t done as well as you have this week but being inspired by you, I did have MORE fruits and veggies. Just not 10-13 servings/day like you. But I have worked hard to get more in my diet. I also haven’t stopped snacking so gotta get motivated on that. I wish you much success at your weigh-in tomorrow.
