This recipe was inspired by Recipe Girl’s post on chocolate banana bread a few weeks ago. It sounded so good, but instead of making it into bread, I made muffins of course!
I adapted the recipe, but it still turned out great!
Ingredients:
5 ounces prunes (the kind that comes in a jar)
1 large banana, or two medium bananas
2 large eggs
1 cup whole wheat pastry flour (I only had all purpose flour so I used that)
1/2 cup unsweetened cocoa
1/4 cup powdered sugar (*I tasted the batter, and it wasn’t that sweet, so I added the powdered sugar)
2 tsp baking powder
1 tsp. cinnamon
1 1/2 tsp. baking soda
1/4 cup chocolate chips
In a mixer, combine the prunes and bananas until smooth. Add the eggs next. In a separate bowl, add all the dry ingredients. Mix until blended. Add the chocolate chips.
Spray a 12 muffin tin with cooking spray. Fill them about 3/4 of the way up. Bake at 375 for 12-15 minutes. Remove immediately and let them cool on a rack.

Ooo, these muffins look delicious. You had me sold with “double chocolate” in the title. And, then, I saw the picture, and I was BEYOND sold. I can’t wait to make these. They look awesome! Sorry I’ve been absent for the past week; I had a friend in town and couldn’t do much blogging!
why stop at double – go for the trifecta and put a chocolate cream frosting on these little gems
