Last week I was reading Food Buzz’s Top 9 picks of the day and one of the recipes was for doughnut muffins!! I knew I had to make them but I did tweak the recipe to make it more calorie friendly for me.
The recipe came from this site:
Here is my version: Makes 12 muffins
1 cup all purpose flour
¾ cup whole wheat flour
¼ cup flax seed, ground
½ cup vanilla yogurt (I used light)
½ cup sugar
¼ cup canola oil
1 egg
½ tsp. salt
1 ½ tsp. baking powder
¾ cup skim milk
3 tablespoons chocolate chips
Just mix everything together until it’s combined. Try not to over stir.
Spray a muffin pan with non-stick cooking spray and bake at 350 for 12-14 minutes or until a toothpick comes out clean.
The person who made these muffins dipped hers in butter and then a cinnamon and sugar mixture. Although that sounded fantastic, I just sprinkled mine with cinnamon and sugar without the butter prior to baking.
Calories for each muffin: 175 calories, 6.5 grams of fat 25 carbs and 1.5 grams of fiber.
The only request from my kids? MORE CHOCOLATE CHIPS! I like to have just a touch of chocolate here and there to keep the calories lower, but although they loved these muffins, that was their only complaint!
Haha…sounds like a kid request to me! Maybe next time you can dip theirs into chocolate and make chocolate topped doughnut muffins? Sounds delicious!
