I bring my breakfast to work every day for a few reasons. Getting 3 kids out the door every morning takes up my time and I don’t have time to sit for a minute! If I eat at my desk, I can check e-mails, and start my day in peace and take my time eating.
Yesterday I opened my fridge trying to think of what to make. It was the end of the week, so my food choices were slim. I still had eggs, and I had leftover taco meat and some black beans and salsa and some cheese, so that’s what I went with!
In a small skillet, add the taco meat and black beans and heat for a few minutes. Then I cracked an egg on top, cooked that for a few minutes, then flipped it over to cook the rest of the egg.
Once it was done, I added some salsa and a little cheddar cheese and hot sauce. It was so good! It kept me full all morning!
If I had some potatoes, I would have added some diced potatoes to that as well.
What is your favorite breakfast in 5 ingredients or less??
3/4 cup egg beaters, huge handful of spinach, 1/4 cup reduced fat feta cheese…sometimes a bagel thin on the side with apple butter or weight watcher cream cheese.
I think I’m gonna try your breakfast. Dave won’t eat beans but I can use them in my breakfasts!
I love breakfasts like this! When we have tacoes I usually “claim” the leftovers for my breakfasts! Sometimes for dinner I’ll make a southwestern fritatta too w/ beans, green peppers, eggs, and we put salsa on top. It is SO filling w/ all the protein from the beans and eggs!
Smart smart!! I have leftover taco meat now! I would want to make a “breakfast burrito” – I’m SO into this breakfast idea – thanks! My would be RF crescent roll, RF sausage, FF cheese and eggs – baked for 20 minutes!
That is my kind of breakfast! I like German breakfasts- bread, meat, cheese, fruit, chocolate, and coffee and fresh juice. YUM!
I’m a sucker for my homemade granola…I eat that stuff like cereal!
