This dinner was easy to pull together because I kind of cheated. I had a pork tenderloin that was already cooked from a brunch my Mom had on Sunday, so I just sliced it up and sauteed it in a skillet to warm. I made the mashed potatoes from a box, with the country gravy my brother gave me for Christmas, and green beans from a can, and biscuits you that were already made that just had to be heated in the oven. I almost never have a meal that’s not all homemade, but its cold out, helping with homework, folding laundry, this was easy to put together! My Mom brought back these cute little balsamic vinegar with olive oil pouches from her vacation in Italy. They are so good! I put some on some carrots I sliced.
Sometimes its easier to make a dinner that most of the work has already been done for you! Have a great day everyone!
Can you believe these temperatures?! Right now, with the sun shining, we’re at -4 with -19 windchill. I feel like the worst dog-mom in the world everytime I have to let the poor puppy outside to go!

I made up a vegetable soup. I only had carrots, so it ended up being a carrot soup =) I guess I need to go do some shopping today. Still love those cute little bottles.
I like to mix balsamic, olive oil, basil, parmesan, mustard, and honey for a delicious dressing.
