First of all, I want to say thanks for all your well wishes about my car accident! I appreciate everyone’s kindness! I do think all things happen for a reason, so I’m moving on!
The rest of my weekend was great. I got a lot of stuff done around the house, we got school supplies for school (I always loved school shopping and getting new supplies for school growing up!). Went to a great fruit market by my house and stocked up on great fruits and veggies, and spent some fun at the local pool!
One of my favorite things to do, is make something deluxe when my family thinks there is nothing to eat. That’s the lunch I made on Saturday. Super easy and quick, but it tasted fantastic. I’m calling it kind of a southwest chicken taco.
I took 2 frozen chicken breasts, seasoned them with salt, pepper, cumin, a little oregano, and chili powder. Cook until its no longer pink in the middle. Since my chicken breasts were frozen, it was about 12 minutes per side.
Then I let them rest for about 5 minutes before cutting into them.
After the chicken had rested, I just sliced it up. In the same skillet I cooked the chicken in, I sauteed 1/4 of a red onion for about 5 minutes.
Then I took 2 tortillas, about 1/4 cup of black beans (from a can, which I heated up separately in the microwave) 1/2 ounce of white american cheese and the red onions and topped it with some chili sauce.
If you like spicy chili sauce, this is one of my favorites!

Now onto a product review!
If you haven’t heard of these yet, you can find them in the fresh fruit and vegetable area of your local grocery store. I was lucky to receive 2 coupons to try these products out. My family all taste tested them and we all agreed they are very tasty, not to sweet, but very fresh tasting. One of the unusual aspects of this juice is that they have very small pieces of real fruit in them. I wasn’t expecting that at first, but after a few sips of tasting (and a little chewing) we all agreed we liked that combo!
Drinking one of these counts as 2 servings of fruit (hence the name of the product!) And its only 120 calories!

Yeah Melissa!! I TOTALLY wanted her to win! I really like all her ideas and I think she is way more down to earth than Jeffrey was. I’m so happy for her!

My wife and I got sucked into Next Food Network star and I have to respectfully disagree with you. While Melissa got better with each episode, Jeffrey was by far much more consistent. I also felt that watching Jeffrey, we were learning something outside of what I could get surfing the internet for recipes.
With that said, I’m sure Food Network knows what it’s doing. Simply put we’re still in a recession, and they’re banking on Melissa’s ability to connect with moms. I wonder however, with more families staying home, if Jeffrey had a wider appeal, especially if they were to put him on prime time.
My guess is they’re both getting shows and we’ll see Debbie, Jeffrey, and Melissa on Food Network in the future.
Great looking lunch! I love frozen chicken breasts because they’re so easy to just stick in the oven or on the stove and voila! ha.
Your lunch looks delicious! I was rooting for Melissa but Jeffrey’s pilot show looked great also when Alton finally helped him define what it is he wanted to do. But I was glad Melissa won, she deserved it!
Craig, I bet you are right that Jeffrey will most likely get some kind of show at some point on Food TV :0)

also, chicken in a tortilla gets me every time. There’s a million ways to do it (luckily, for us spice-a-phobes), and they’re all good and quick!!

I too am happy about Melissa winning, although I did love Jeffery as well! I’m with Craig-I’ll be surprised if Jeffery & Debbie don’t get a show or something on the Food Network, too good to pass up!
Oooh, those look good. I always forget to use cumin on my chicken seasoning for tacos, I always just slather it in hot sauce. And I LOVE hot chili sauce but I haven’t tried that one. It’s on the list for next time!
I just finished watching Next Food Network Star and I, too, am so happy…yeah for Melissa! I’ll definitely watch her show…I liked that she was the total underdog, too.
Thanks for the recommendation of chili sauce! I never really know what to buy in that area so I’m anxious to test that one out!
Yes!!! I tried that fruit drink at a taste test at Bristol Farms in Beverly Hills. I was with my daughter and we both thought it was just fantastic!

Ok, I’m just now reading this! Thank you for putting a warning in the title that this would be a spoiler!! π I had DVRed my episodes and just now watched them tonight! I’m so so so happy and surprised that Melissa won! She was my favorite all season and I was rooting for her or Jamika. Jeffrey was nice, but he felt a little insincere to me and the Ingredient Smuggler wouldn’t have interested me b/c where the heck would I have bought the stuff he was talking about?!?!?
And thank you for the review of the Fruit2Day!!! I’ve been intrigued by the commercials where they say “bits of fruit” and didn’t understand if they meant chunks in there – but I guess they do!
I’ve got to disagree on the Food Network Star – Jeffrey was my pick all the way simply for originality!
Melissa was too much of a Rachael Ray clone for my taste. Already have that – bring on something new.
Plus, it annoys me, as a SAHM myself, when companies think all SAHMs will flock just because a product/show is from another SAHM.
Don’t get me wrong, I love supporting other moms, but it still has to be a good product/show.
Tacos look fabulous, BTW. I love pilling something like that out of the nearly empty pantry & having dh just scratching his head in amazement. π
