I think so many times in the past when I have tried to lose weight, I would follow some strict program, or couldn’t eat certain foods, or eating foods in combinations. Why do that to yourself? So many times you read that losing weight is a lifestyle change. I believe that it is, but I also believe you should LOVE what you are eating while losing weight.
This was my breakfast yesterday:
I had a Thomas’s brand Lite English Muffin
1 egg + 2 egg whites whisked with 1 TB. skim milk
3 slices deli pastrami
1/2 of colby jack cheese
Chipolte mustard on both sides of the English Muffin
It was AMAZING. And, it kept me full until my totally deluxe lunch!
I love leftovers and this is what that was. I had:
A 4 oz. ground sirloin burger on a lite bun
4 oz. baked home fries
grilled onions on the side
I kept thinking while I was eating this that it is so much better than eating a frozen Lean Cuisine for sure!!
For the fries, I just cut up potatoes, use about 1 TB. of canola oil + a spritz of Pam Cooking spray. Then I add a little chili powder, cumin and salt and bake at 400 for about 25 minutes until it starts getting browned. I do turn the potatoes once during the cooking process. It’s my favorite thing to make with burgers!
And I make pasta at least once a week. So pasta night it was!
For the sauce I used 1 28 oz. can of diced tomatoes, 1 28 oz. can of tomato sauce. In a blender, I mixed the diced tomatoes with 1 red pepper, lots of garlic, 1 onion and 1/2 a cauliflower. Mix until its all blended together.
Simmer in a pan for 20 minutes or so. I added oregano, salt and pepper and crushed red pepper flakes.
And, garlic bread to go with!
Now that’s what I call a fantastic day of eating! Not shown was my Mom’s hummus with baby carrots for my snack.

And, I am going out to lunch today with my twin sister and my Mom, so I am looking forward to that!
I struggle every single day with this… great attitude. i try portion control, and make an effort to get a “get off my ass” session that lasts at least 45 minutes. Dropped 15 pounds in 6 months, and do not feel too deprived (always a little).

I love a fried egg on a whole wheat english muffin (spread with some smart balance lite) for breakfast. I didn’t know there were light english muffins, will look at the difference in nutritional values next time I’m at the store. Thanks!
I love how you said you should “LOVE” what you eat…you and Biz…seriously, the stuff you eat, it does not scream deprivation to me at all. You guys truly know the meaning of GOOD FOOD in moderation!
