Since I made the homemade English muffins yesterday, I decided to make two small McMuffin type sammiesI “fried” and egg with Pam cooking spray, and divided it between the two English muffins. I added 1/4 oz. of cheese on each one, and two slices of pepperoni and heated them in the toaster oven when I got to work and then added a sliced orange to go with. It was so good, kept me full all morning, I didn’t even have a morning snack.
For lunch, I made half a pita sandwich, with some spinach, red onion slices, a little honey mustard dressing and 2 oz. of turkey deli meat. I brought a can of Healthy choice chicken noodle soup, but wasn’t really feeling that, so my friend Olivia at work gave me a can of Trader Joe’s brand Vegan black bean soup.
With the soup, the sammy and the carrots and honey mustard dressing, my whole lunch is 500 calories. Β And, I couldn’t finish the soup because I was so full, so that was kind of nice!
Today I am attempting to make homemade cheese bread, check back later to see how that turns out!
