I got this super old Weight Watchers Cookbook for a quarter at a garage sale. I’ve actually used it several times and this morning I used it to make pancakes. There was a recipe for buttermilk pancakes, but instead of adding the buttermilk, I added fat free egg nog instead!
Ingredients: (I made a few variations)
1/3 cup + 2 TB fat free egg nog
1 egg + 1 egg white
1/3 Cup + 2TB. all purpose flour
1 tsp. vanilla
1 TB. sugar
1/2 tsp. baking soda
1 TB sugar free syrup
1 TB. chocolate chips
Mix together and cook on a griddle until golden brown on each side
My recipe made 8 pancakes

Honestly, I think eggnog is so gross – I think it’s too sweet & thick or something 🙁

Yum, egg nog pancakes sound heavenly! I have not made anything with egg nog yet but I have been thinking about it actually.
I’ve gotta try this one. Problem is I am the only egg nog drinker in the house.
Lately breakfast has been a whirlwind and all our pancakes have been from a CAN (Batter Blaster organic so it’s not so bad).

I love eggnog and the first year I moved in w/ Johnny I woke up early and snuck downstairs to make “surprise” egg nog pancakes. Ugh – they were HORRIBLE. Solid and dense and dried out. We figured in the future I’d need to do a lot more tweaking b/c all I did was swap out milk for egg nog, but it’s WAY too thick. hehehe Glad yours turned out better – we still laugh about mine!
Nice use of eggnog, especially since yours was much lower in calories. Very smart. It makes a nice addition to icing for cookies as well.

Love egg nog hate making pancakes. So sue me. The kids love them though so this batter blaster will be on my list. Wonder where to get them? Don’t think I’ve seen them at Safeway but then again I have not been looking.
