
I was happy I made my beef stew in the crock pot so when we got home at dinner time it was all ready. I just diced up 3 stalks of celery, 4 carrots, 5 medium potatoes, half a white onion, a few cloves of garlic. Add that to the crock pot and add 1 lb. of beef stew meat, (which I browned in a skillet first) and add 3 (12 oz) cans of V-8 juice, salt and pepper to taste, and 2 tsp. basil, and cook it on low all day of on high for 4-5 hours. So good!
For breakfast I made one of my new favorite things, egg stuffed baked potato.
First, I cooked a baked potato in the microwave. I cut off the top and scooped out most of the insides.
In a small skillet, add 1 slice of turkey bacon and cook that until itβs done. Add the cooked potato, 1 egg, 1 egg white, 1 green onion (chopped) and cook until the egg is done.
Add the egg mixture back into the hollowed out potato and sprinkle the top with a little cheese and itβs done! This was such a filling breakfast and it takes no time to put together.
