I bring my breakfast to work every day. I do this for a couple of reasons. I am always making my kids lunches in the morning, ironing clothes, finding socks, etc… and there is never enough time to sit. Also, if I eat at work, its usually about 9:00 a.m. and it will usually be the only thing I will have until lunch so I like to make it totally deluxe. I’ve been doing oatmeal recently but decided to have waffles instead. I had Fit and Active Brand Waffles from Aldi. They are 100 calories each and I had 2. Then I saw I had turkey sausages, which you get 3 links for only 110 calories. When I got to work, I put it all together.
With the 2 waffles, 1/4 cup sugar free syrup, 3 turkey sausage links, 1 banana, and a few slivered almonds on top, I felt like I had ordered this from a restaurant! And all this came in at around 420 calories!!
Since its towards the end of the week, it was leftover night at my house. The funny thing is I had bought these vegetables on the dollar rack at my grocery store. I thought they were zucchini, but when I got to the register, I asked the lady what kind of vegetable they were and she told me in Spanish, so I have no idea. Its not zucchini, its not a cucumber. I thought maybe an English cucumber? It is more melon tasting than a cucumber. Anyway, I peeled it and drizzled Annie’s Green Goddess dressing on top. It was pretty good!
So I had a small chicken breast, some left over mac and cheese from the other night and the mystery veggie! If anyone knows what kind of veggie that could be, please let me know! This is what the veggie looked like before I peeled it.

Looks like zuchinni to me! I’ll ask my brother, and see if he’s come across it.
I showed him both pictures and he said it looks like a zuchinni too! The funny thing is – it looks like one, but the slices don’t! And you said it tasted kind of melony. Wonder if it’s a weird cousin?
It’s a type of Italian Zucchini I forget the exact name, but I’ve grown them before. They have an especially delicate skin so you shouldn’t need to peel them (although that’s obviously up to your personal preference).
I think that maybe the veggie is a zucchini marrow or calabacitas. It has a paler yellow flesh and is sweeter than a zucchini.
Bellini Valli, I asked a friend of mine at work and she also said calabacitas. Have you ever worked with that veggie before? My friend said her Mom adds it to soups. I wondered it I could use the remaining two in maybe a zucchini bread/muffin? Thanks for everyone’s help!
It’s a zucchini, which is a squash. Calabacitas is its Mexican name.
Definitely a zucchini. LOVE THEM.

your breakfast sounds incredible!!! i made a breakfast quiche last night and had a slice warmed up this morning and LOVED it… but just like the last time i was questioning the fat-factor of a dish, i’m hoping you can help me make it a little better?!
i used a chunk of breakfast sausage and cooked it up in a pan with no oil or anything, and patted out some of the grease before baking it in the quiche. the quiche was a store-bought pie crust, low-fat shredded cheddar, the sausage, 4 eggs, and 1 cup of heavy whipping cream. the original recipe called for 2 cups of cream but the last time i made it i didn’t like how it set, and this one turned out much better! is there a decent substitute for the cream? can i just use the 2% milk i always have in the fridge? i’m assuming the bulk of the calories is coming from there but also assume it can’t be eliminated! maybe if i use turkey sausage like you did that would help too?
