I love grocery shopping. If I could spend a Saturday afternoon at any grocery store I would. I love Trader Joe’s (although I only get there about once a month), there is a Whole Foods about 10 minutes from my house (but too expensive for weekly shopping!) I sometimes go to Jewel or Dominick’s (I live in the Chicagoland area). My recent fave place to shop is at believe it or not Aldi. You have to bring your own bags and you have to bag your own groceries, but I can save at least $50.00 per week going there. And they have a brand called “Fit and Active” which is healthy. I was there over the weekend, and I happened across a big bag of precooked grilled chicken strips. I looked on the back for the nutritional information.

So, I decided to make Chicken Enchiladas with them. I bought two cans of Enchilada sauce, tortillas, and shredded Mexican cheese blend. When you are trying to lose weight, but still cook for your whole family, how do you figure out how many calories your serving is? Well, I measured out the 3 oz. of chicken and divided them between 2 Mission brand lo-carb tortillas. I then measured 1/4 cup of the Enchilada Sauce, and 1/4 cup of cheese. I place my two Enchiladas at the end, so I knew which ones were mine. Total calories for 2 big Enchiladas 380 calories 7 fat and 18 fiber (The fiber came from the lo carb tortillas). It was great!
