
Let me first start out by saying that I LOVE McDonald’s Sausage Egg McMuffin’s and hash browns. Back in my fast food days, it was not uncommon to start my day like this. And the worst part was I wouldn’t get one hash brown, but most likely two! Looking up the stats for that, I would have started my day at 730 calories 43 grams of fat, and sometimes I would get a large coke with that adding an additional 310 calories to the meal! I know it’s the breakfast of champions! (And I was overweight because???) This morning I made my own simple McMuffin using a Thomas’ brand Light English muffin. I specify Light because you will find a lot of varieties of their English muffins on the shelf. The Light version is only 100 calories and has 8 grams of fiber.
· 1 Thomas’ Light English Muffin
· 1 egg + 1 egg white
· ½ ounce pepper jack cheese
I toasted the English Muffin, placed the cheese on top, cooked the egg in the microwave in a small dish coated with cooking spray so it won’t stick, and put it altogether and wrapped it in foil so I could eat it when I got to work. The best part was when I got to work, the cheese had all melted and it was fantastic!

· 8 grams fiber
If you had it on hand, you could add a Boca breakfast sausage, or Hormel turkey breakfast patty, or a slice of Canadian bacon, or 2 slices of Jennie-O turkey bacon. Or just change the kind of cheese.
The best part about it is that it will keep you full for a long time!
And, if I had more time, I would have made an Ore Ida brand hash brown. It comes in a box in the frozen section where the French fries are. Each hash brown is only 70 calories and no fat. I cook it in a skillet with Pam cooking spray and it’s my own healthier version of a breakfast which is, lets face it, a heart attack on a plate!
