One great thing about the nutrition class I am taking at a local community college this semester is all the valuable links that the book gives for getting more credible, great information. One of the links in the chapter I am reading lists Harvard School of Public Health. I never thought of Harvard as being a place to go online and get nutritional information or recipes, but guess what? They have a lot of recipes, and great advice! I love green beans, I have them every week. I’ve been buying the fresh more, but frozen is okay too. I saw this recipe and had to try it. My husband loves red chili garlic sauces. You can find it in the Asian section of the grocery store. Green beans with chili garlic sauce
- 3/4 pounds green beans, trimmed
- 2 tsp. olive oil
- 1/4 small red onion, thinly sliced
- 1/2 medium bell pepper, thinly sliced
- 1/4 pound shitake mushrooms, sliced
- 1 clove garlic, minced
- 1/2 tsp. red chili garlic sauce*
The red chili garlic sauce I get is really spicy!! So I would taste it first and if you like it hotter, add more.Add the green beans to a pot of boiling water. Cook for about 5 minutes, or until they are bright green and still slightly crisp. Meanwhile, prepare a bowl of ice water and set aside.Drain the green beans and immediately place them in the bowl of ice, so the cooking stops. Drain the beans again and set aside.Heat the olive oil in a large skillet over high heat. Add the onion, pepper, and mushrooms and cook for about 3 minutes, stirring constantly, or until the vegetables begin to brown slightly. Add the green beans, garlic, salt and pepper to the skillet. Cook for about 30 seconds. Add the red chili sauce to the skillet and stir to coat the vegetables as well. Remove from the heat and serve. It serves 4. Each serving is 80 calories, 2 fat and 4 fiber. That would be a nice thing to bring to Thanksgiving. Something a little different and fun! You could easily double or triple the recipe for a big crowd. By the way, this is the chili sauce we get. I put it in soups, rice, stir frys. It is spicy!
That sriracha sauce is the best. I like it on rice, potatoes, chicken sandwiches, pizza, tacos, Golden Grahams, bananas, and trail mix…
My dad loves that sauce – it was always in the fridge growing up. I’m not a spicey eater, though.
