- 1 TB of Tabasco
- 2 garlic cloves, minced
- 1 TB. honey
- 1 tsp. paprika
- 1 tsp. ground black pepper
- 2 boneless, skinless chicken breasts
- 1 green bell pepper, cut into strips
- 1 yellow bell pepper, cut into strips
- 1 yellow onion, sliced
- 4 whole wheat tortillas
- 2 tomatoes, diced
- 4 oz. low-fat cheddar cheese (such as Kraft Brand, comes in a brick)
In a large skillet, whisk together Tabasco, garlic, honey, paprika, and pepper. Add chicken to marinade and turn to coat. Let stand 10 minutes, turning occasionally. Add peppers to the skillet and saute until crisp tender. Add the chicken and cook until no longer pink. Wrap in warm tortilla and top with tomato and cheese. The good thing about this recipe is that it is not very expensive to make for a party and you can double or triple the recipe if needed. For 1 tortilla and 1/2 cup filling, it is 315 calories, 7 fat and 4 fiber. If you don’t want to eat it with the chicken, you could make a veggie fajita for less calories and it would be just as good. Have a safe and happy 4th!!
