Happy 4th!! I’ve been on vacation for the past week which has been so nice! Today we are going to a family party. I’ve had one of my Peanut Butter muffins for breakfast, and I plan to have a light lunch and I am thinking of bringing my own meat to grill to the party. I have the Aldi brand chicken patty’s which are only 140 calories, and I’m sure my brother-in-law won’t mind if I ask him to throw one on for me. Then I will try to stay away from the chips, and stick to veggies and healthier things to munch on. I hurt my back yesterday so I think I won’t be able to work out today, but I am not going to let that deter my healthy eating plan. I don’t have to bring anything to today’s party but if I was I would bring chicken fajitas. You can wrap the chicken mixture in foil and same with the tortillas. You could even throw the packets on the grill to warm up. It’s something healthy you can eat and still feel satisfied.I got the recipe from Clean Eating Magazine.
- 1 TB of Tabasco
- 2 garlic cloves, minced
- 1 TB. honey
- 1 tsp. paprika
- 1 tsp. ground black pepper
- 2 boneless, skinless chicken breasts
- 1 green bell pepper, cut into strips
- 1 yellow bell pepper, cut into strips
- 1 yellow onion, sliced
- 4 whole wheat tortillas
- 2 tomatoes, diced
- 4 oz. low-fat cheddar cheese (such as Kraft Brand, comes in a brick)
In a large skillet, whisk together Tabasco, garlic, honey, paprika, and pepper. Add chicken to marinade and turn to coat. Let stand 10 minutes, turning occasionally. Add peppers to the skillet and saute until crisp tender. Add the chicken and cook until no longer pink. Wrap in warm tortilla and top with tomato and cheese. The good thing about this recipe is that it is not very expensive to make for a party and you can double or triple the recipe if needed. For 1 tortilla and 1/2 cup filling, it is 315 calories, 7 fat and 4 fiber. If you don’t want to eat it with the chicken, you could make a veggie fajita for less calories and it would be just as good.
