I mentioned the other day that I make pasta a lot. This is another recipe that gets requested fairly often. My famous home made chicken tenders. Usually it is requested on nights that my sons will have their friends over for a sleep over and they are staying for dinner.
This was the case last night when my youngest son had his friend over, and as they were passing through the kitchen while I was making dinner, my son told his friend, “My Mom is making the best dinner ever!”
Of course I never get tired of hearing that! And considering his friend went back 3 times, he liked them too.
I’ve posted the recipe before, but here is a re-cap of the recipe.
I start with boneless, skinless chicken breast, trimmed of all fat. Cut it into strips. Then I take a plastic bowl, fill it with about a cup and a half of skim milk and place all the cut up chicken in that (it will help make the breading stick).
In a large ziploc bag, Put about 1 cup of flour, some bread crumbs, salt and pepper, and I put some Lawry’s season salt in the bag too.
About 4-5 chicken strips at a time, place them into the bag with the flour/bread crumb mixture and shake until well coated. Set aside on a plate. Continue this process until all the chicken is coated.
Now, I don’t fry any other food really besides my chicken tenders. I use my largest skillet and pour a few inches high of oil. Turn the burner on med-high until it gets hot. I will test the oil by dropping a drop of water into it. If it starts to sizzle, the oil is ready.
Here is the important part! If the oil is hot enough, you should only have to cook the tenders 3 minutes on each side. (If they are thicker, then maybe a minute longer). I have found that this exact time will produce a crunchy outside, but tender inside. There is nothing worse than having tough chicken tenders!
Once you make this, your family will go crazy for them. I think its kind of nice that my kids are so proud of my tenders to want to show them off to their friends!! Hope everyone had a great weekend!

Genius by your neighbor to make good use of a crack. My driveway is horrible but I am to lazy to fix it and not big enough to do something like this.
I do something similar but I enjoy throwing in some chipotle powder and other hot spices into the mix to make me sweat. Not kid friendly and if I ever have kids probably will have to tone down a lot of my recipes.
I made these, and they did not turn out right. The bread crumbs did not stick and so there wasnt much on them when they were done. How much bread crumbs do you add to the 1 cup flour? They didnt have much flavor either.
