I wake up later on the weekends, so most times I just have brunch, instead of breakfast and lunch.
I was trying to think of what to make, when I thought of making kind of like a Denny’s breakfast slam. Omelet, home fries, ham, and a bagel. BUT, how do you make that healthier? Control and measure the ingredients.
Denny’s All American Slam has 3 egg with cheddar cheese omelet, 2 slices of bacon, 2 links of sausage, hash browns and 2 pieces of toast.
My version?
1 medium potato
1/8 cup diced red onion
2 cloves of garlic, chopped
1 egg, 2 egg whites
.25 ounces pepper jack cheese
3 oz. cubed ham
1 Arnold thin
1 tsp. olive oil
1 pat of butter
To make the potatoes, wash a medium potato and cook in the microwave until done. In a small skillet, I added the 1 tsp. olive oil, 1 pat of butter and added the red onion and garlic. Cut the potato up into bite size pieces, and cook until golden, stirring occasionally. I just added a little chili powder for color and salt and pepper to taste. Once those are done, set aside.
Next, I cracked an egg + 2 egg whites in the skillet to make the omelet. The only thing I added was pepper, because once it was done, I just shredded a touch of pepper jack cheese for flavor.
Once that was done I transferred the omelet to the plate and used the same skillet to warm up the ham.
The calories in my breakfast slam WITH coffee with a little cream and sugar?
603 calories, 22 grams of fat and 34 grams of protein and 8 grams of fiber.
Since this is my breakfast AND lunch, I can fit it into my healthy eating/weight loss plan. Isn’t that awesome?
Just for curiosity’s sake, I checked out IHOP’s breakfasts. If you ordered the ham and cheese omelet ONLY, no sides, it is 870 calories and 60 grams of fat. Now that’s gross!

I think your breakfast looks so much more delicious than any greasy Denny’s/IHOP! I actually find it difficult for me to eat out anymore because I feel I can do better (tastewise and caloriewise) myself.

Typically on the weekends, I do like to make a heartier meal, especially since I have more time to prepare it.

I always make big breakfasts on the weekends but I never make hash browns and totally should – they are so good! Love your healthy makeover 🙂
