One of my worst habits I would say would be late night snacking. I do great during the day, eat a great dinner, but after the kids go to bed and my husband and I are watching TV, we tend to snack. And why do I buy Oreo cookies when they are calling my name??
So, I wanted something sweet, but didn’t want cookies, no ice cream, and then I thought of it. “I’ll make a batch of my graham cracker muffins!” Is anyone else crazy enough to start baking at 9:30 p.m? I am!
I whipped the batter together, threw them in the oven, and made a nice glass of tea. Nothing is better than a totally deluxe muffin warm out of the oven. It hit the spot!! AND, I didn’t go over my points for the day!
I’ve posted this recipe before, but if you’ve never seen it, here is the recipe! I got this from Celine at www.havecakewilltravel.com.
The best part is that you use no eggs, or margarine, or butter, or oil for that matter!
1/2 cup all purpose flour
10 graham cracker sheets (I package) ground or smashed into small pieces
1 cup soy milk (I used skim milk)
2 1/2 tsp. baking powder
1/2 cup sugar
2 1/2 TB. ground flax meal mixed with 3 TB warm water(this replaces the egg)
4 TB. chocolate chips
In a mixer, mix together the flour, crushed graham crackers, sugar, baking powder. Next add the milk, flax meal mixed with water, and chocolate chips.
This time I decided to make mini muffins instead of 6 jumbo muffins. For each mini muffin it is 62 calories, 1.25 grams of fat and .7 grams of fiber. I used a mini muffin tin I bought from Pampered Chef, it makes 24 mini muffins.
If you choose to make 6 jumbo muffins, then each muffin would be 251 calories, 5 fat and 2.8 fiber.
What tips do you have for curbing late night snacking???
One tip is use mini chocolate chips in this recipe – more chocolate to go further! 😉
I often eat my 100 or so calorie power muffins at night, like the blueberry lemon ones I make. Other faves are a slice of my whole wheat bread with a slice of 2% american melted on it or some laughing cow light spread on it, an apple with 1 tsp PB, 100 calorie pack of 94% light popcorn (or just that amount equivalent), Fullkorns Pepperkakor from Ikea (awesome whole grain gingersnaps), juliettes (little mini ice cream sandwiches). As you can see, this is one of my problem areas, too. 😉 But like you, I budget for the day and then I’m okay!
Curb late night snacking…tie my hands down or just go to bed!
I always get really thirsty at night, so I down a glass or two of water in the time between dinner and bed. I hattte getting up to pee, so that’s the downside, but I think maybe that curbs my snacking b/c I’m not much of a night snacker.

these sound good but to answer your question – popcorn with nutritional yeast and safflower oil instead of butter…
I can’t do late night snacking as that’s what got me in a lot of trouble in the first place. I make sure I eat enough for dinner and allow myself some sort of dessert if I want it (usually a piece of dark chocolate with almond butter) but then I’m done for the night. I do have some herbal tea every night which has helped me a lot when I feel like snacking…
The muffin recipe sounds great though; I just won’t have them at night… 😉
