I was all set to make chicken with a marinade I found when I was straightening out my cabinets. The packet had one side with a dry rub, and the other side was a liquid marinade. I won’t tell you the brand, because it was gross! I tasted the marinade and it tasted like it was just soy sauce and the “rub” was so salty. I’m so glad I tasted it before I put it on my chicken! The chicken I bought were 3 huge chicken breasts, so I decided to cut them lengthwise to make them thin cutlets so the cooking time was lessened. Just carefully place your hand on top of the chicken breast and using a sharp knife, just cut starting at your fingertips all the way down until you have 2 separate pieces. I did this for two reasons: 1). It looked like I had way more chicken and 2). It only took minutes to cook. Since my marinade didn’t turn out as planned, I just used Mrs. Dash Lemon Pepper seasoning. Sear each side on high for two minutes, then turn down the heat and cook for about 4 more minutes or until no longer pink.
I served it with pea pods sauteed with 1 tsp. butter and sliced garlic and some prepared rice in a box!
Christina posted this recipe last week and I didn’t believe it! She made peanut butter cookies with: 1 cup sugar, 1 cup peanut butter and 1 egg! (I added just a few M&M’s though!) My kids are going to be surprised to see these in their lunch tomorrow. Thanks for posting that Christina, I’m glad I gave it a shot!
