When I got home from work, well even before I got home, I told myself I was going to work out before dinner. I announced it to my family when I walked in the door, immediately got changed and got busy! I did 20 minutes on my elliptical followed by 20 minutes of a Biggest Loser work out. Did you know that if you have Comcast Cable (in the Chicago-land area) that there is a channel on demand called Exercise TV, and there are hundreds of work outs to choose from for free! I found 6 Biggest Loser work outs, Taebo, Yoga, work outs with weights etc… so there is no reason at all that I can’t work out!
I was done by 5:45 and headed to the kitchen to make dinner. I had no idea what to make! I went to the store but only threw things in my basket hoping I would be able to come up with 5 meals this week for dinner.
I checked my freezer, I had frozen chicken tenders. So I thought I would cook those up, sprinkled with Lemon Pepper Seasoning. I had a box of wild grain rice, so I cooked that up. I was going to make a side salad when I decided I would just put my chicken ON the salad!
Does anyone else have this Celebrate plate from Pampered Chef? I used it tonight to celebrate me working out!
So on my plate I had baby spinach, mixed greens, 1 small apple, chopped, celery, carrots, soy nuts, red onion, the chicken and Paul Newman’s Light Honey Mustard Vinaigrette.
It was so good I could have eaten another plate, BUT I didn’t!!
I have a favor to ask of you. I met John at the Food Buzz web site and he is trying to win a contest for Murphy-Goode Winery’s “A Really Good Job” Sweepstakes where he can tour and talk and write about the wine country for 6 months! How cool is that? BUT, in order for him to get to the next level, he needs as many votes as he can get! Click on this link to watch his short video and vote today! Check out his fantastic blog too!
Also, Heather at 365 Healthy Eats is having her first give-a-way on her site for some great Outer Banks, North Carolina gifts, including a hat and t-shirt, so check out her site and leave a comment to be entered!
I hope everyone has a great day!
Congrats on getting that workout in! : ) I think it helps to announce it because then everyone expects it and it’s harder to change your mind, haha. The chicken looks wonderful, I love lemon pepper on chicken (but we don’t have it often because my husband doesn’t think it’s so wonderful, haha).
Congrats on the work out. When I get home I can not stop or else I will never make it to the gym. I have even gotten to the point where I keep my gear in the truck and just head from work to the gym.
Chicken salads are one of my favorite things especially spring and summer where a quick meal means more time outside.
I love that Exercise TV thing! Sometimes, when I don’t feel like walking the neighborhood, I’ll do something on there! It’s a nice change.
I’m just like Jeff, I can’t make a pitstop at home or else I’ll never make it to the gym! I admire that you can workout at home. Even though I don’t have home exercise equipment, I just don’t think I could do it at home! I think I have to be at the gym, around people, to get me motivated. But kudos to you, it is definitely a time saver!! And this salad looks great, very simple.
Congratulations plate was definitely in order 🙂 Good job!! And yes, the salad looks superb, totally understand why you were thinking about seconds!
Wow you whipped up such a great dinner after that hard workout- Good for you! It looks delicious!
Looks like a yummy salad – Paul Newman’s Light Honey Mustard Vinaigrette is one of my favorites! I will go vote now 🙂
A good way to guarantee a workout is to announce it to multiple people…you feel accountable to your word. Nice job fitting it in and eating a great dinner!
I voted! What a cool gig! I went and left Heather a comment (not for the prize, b/c that wouldn’t be fair) but to tell her I grew up on the Outer Banks! So funny that a lot of bloggers know about my little hometown. Whenever I mention it to anybody in “real life” they look at me confused like “should I know where she’s talking about?!”
I want Exercise TV! I’ve heard great things about it. Good job with your workout 🙂
I’m totally into lemon pepper lately…putting it on everything! This looks like a great, quick dinner!
Hi Jenn, what a coincidence. I just had Chicken salad for lunch. Not as good as yours here, but it was quite satisfying.
Yum, your salad looks so delicious! I love lemon pepper chicken!
That salad looks so good!!
I love lemon pepper chicken! The market where I do a lot of my grocery shopping has the BEST lemon pepper chicken which I get sometimes when I’m feeling too lazy to cook 🙂
I have lemon tarragon chicken marinating right now for tomorrow. Hopefully it will be as good as yours looks!
Good job getting your work out in! I’m going to check out the exercise options at comcast for sure. And that dinner looks absolutely delicious. I love lemon pepper chicken!
Great job with the work out! i used to really love the exercise programs on TV, I should check it out again. The lemon pepper chicken sounds delightful!
