I mentioned yesterday, that I got a new cookbook for Christmas.
As I was reading through it, I saw a recipe for baked donuts. I’ve made several variations and I love lemon poppyseed, so I set out to make them. One problem, I don’t have a donut shaped pan to bake them in, and the batter was more like muffin batter, so I turned them into mini muffins instead!
They actually came out really good too! The ingredients listed below is double the recipe. If you have a donut pan, it makes 12 donuts for this recipe. I made 40 mini muffins.
Each muffin is only 53 calories, 1.2 grams of fat and 10 carbs and 5 grams of sugar.
2 cups all purpose flour
1 cup sugar
2 tablespoons poppy seeds
1 teaspoon baking powder
1 tsp. baking soda
½ teaspoon salt
2 eggs
2/3 cups skim milk (or buttermilk)
2/3 cups yogurt, plain, low fat
2 tablespoons Canola oil
2 teaspoons lemon juice
1 teaspoon grated lemon peel
1 teaspoon vanilla extract
You can also make a glaze with 3 TB. of powdered sugar with 1 – 2 tsp. of skim milk added. Just mix that together and drizzle over the top.
The only thing I would have done differently is added more lemon juice and lemon zest. I squeezed half a lemon into the batter, and I think the whole lemon would have been perfect.

Since it’s the end of the year, they have profiled the 20 worst foods of 2010 in restaurants. Check out the article HERE. It’s a HUGE eye opener as to how insane calories in entrees have become. Did you know that an order of large fries at Five Guys Burgers is 1,464 calories 71 g fat and 213 mg sodium?? And people eat that WITH a burger! Yikes.
So, my advice is don’t eat that stuff!
I stepped on the scale today and it wasn’t good! So, I got a huge salad from the salad bar at a restaurant near my office (brought my own dressing) and I have spinach, cauliflower, kidney beans, garbanzo beans, red onions, carrots, peas, celery and it is SO GOOD!
I have to get back on track ASAP – who’s with me??
