When I got home from work yesterday, I had this cooking magazine waiting for me in my mailbox. Its the second time I’ve received it, and I didn’t even order it! So that’s kind of nice! It’s a companion to the Cook’s Illustrated Cooking Show on PBS. The great thing about this magazine is it has a ton of recipes (not always healthy, but you can lighten them up with variations) and lots of cooking tips as well as information on new kitchen gadgets, or reviews of certain food items. Here is my breakfast for today. I posted earlier about my excellent sandwich with the lo carb pita. This morning I used:
- 1 low carb pita
- 1 oz. mexican cheese
- 2 slices deli turkey
- honey mustard
- 1 egg + 1 egg white
I cooked the egg and the egg white in the microwave. Slice the pita in half, put honey mustard on each side, the turkey, and the cheese. Place the cooked eggs on top. I usually cover it in foil and bring it to work. I work about 5 minutes from my house, so by the time I get here, its still warm and the cheese is all melty. This very filling breakfast is only 380 calories and about 8 grams of fat. I had this for lunch yesterday and it kept me full until lunch! It was so good, I’m having it again today!!
Yum! I love savory breakfasts versus desserty ones. They’re so filling and satisfying.
