I’ve been reading a few books I got from the library about people who have succeeded in weight loss and what it took to get them there. I like to hear inspiring stories of how people overcame adversity and finally got healthy and fit. One thing that repeats itself over and over again is making choices. (or making the right choice). For the longest time, if I gave in to a free lunch at work, or ordering pizza because I didn’t feel like cooking, I would use those opportunities to say, “Well, I may as well eat it, and not worry about portions or calories, or say, I’ll just worry about my weight loss tomorrow. If you say that enough, tomorrow never comes! So, I am all about making the best choices I can one day at a time.
I knew I was going to make something with chicken last night for dinner, and then thought I would make a huge salad for myself. I actually thought of a few fellow food bloggers while I was making dinner. I thought of Sharon. She is a young woman from Canada and I am always impressed by her food choices. She frequently has days where she has beautiful plates of vegetables and fruit. To her, this is normal and makes her feel good. So I decided to make a meal like Sharon would!
This was my awesome salad. I put in: spinach, red onion, 1 small apple, strawberries, red grapes, soy nuts, carrots, small chicken breast, and Paul Newman’s Light Balsamic Vinaigrette.
And, thanks to Christina, I finally found the red quinoa at Jewel!
AND, I’m on day 5 of doing my elliptical at home for 30 minutes! Wahoo!
So, I’m taking the weight I lost already and renewing my vow to getting the rest off by the end of the year. I’m just going to make the best choices I can each day and continue to eat healthy and exercise. I know I can do it!

This sounds so good! I love Newman’s Light dressings – they really are the most flavorful and I like knowing that the ingredients are pretty wholesome. I’ve been trying to cut down on additives, HFCS, etc.
Sharon’s meals always look amazingly fresh and colorful, she’s definitely a good person to get inpiration from!
