There are a bunch of different ways you can make this. You can use your own homemade pizza dough, a store bought pizza crust like a Boboli pizza crust, but my favorite is to just use a tostada. You can buy them right by the tortillas, they come in a package of about 10-12. Using that, or whatever your base is, add:
- 1/2 cup prepared black bean dip (purchased by the salsa)
- 6 scallions, chopped
- 1/3 cup salsa
- 1/2 cup shredded low fat mozzarella
- 1 medium tomato, seeded and diced
- 1/2 medium avocado
- 1/4 cup low fat sour cream
- 1 cup shredded lettuce
- Preheat pizza crust according to package directions, or if you are using a tostada, no preheating is necessary.
- Spread a layer of black bean dip over the crust.
- Follow with a layer of salsa and sprinkle with the cheese.
- Top with chopped scallions (you could add olives too if you want here).
- Bake as directed for pizza crust, or if using the tostada, it takes about 5-7 minutes at 350.
- When done, top with tomatoes, avocado slices, sour cream and shredded lettuce.
- If you use a large Boboli crust, for 1/4 of the pizza is approximately 307 calories, 10 grams of fat and 10 grams of fiber.
- I like using the tostada shell because its only 50 calories, and you can figure out the calories from there. If I use the tostadas and make 2, it feels like its a bigger meal. You could also add taco meat to it, or shredded chicken with taco seasonings as well to make more of a hearty meal. Its a super easy dinner to make on a busy night.
