I love muffins! The only problem is that I would go by my local bakery every morning for an enormous muffin. I’m pretty sure they were in the 800 calorie range, not to mention baked with butter which has tons of fat. This led me on my quest to find muffin recipes that would satisfy my need for a nice muffin. This week I made a Jumbo White Chocolate Cornmeal Muffin that I found from this site: www.havecakewilltravel.com
It was awesome! The whole muffin was 365 calories, only 3 fat and 5.8 fiber!
Check this picture, where I opened it up and put a teaspoon or two of smart balance butter on top…can you see the steam rising from it??
Here is the recipe:
- 1 1/2 cups cornmeal
- 1 1/2 cups whole wheat flour
- pinch of salt
- 3/4 cup sugar in the raw (I used regular sugar)
- 3/4 tsp. baking soda
- 1/4 cup apple sauce
- 3/4 cup soy milk or skim milk (I used skim milk)
- 3/4 cup orange juice
- 1 tsp. white balsamic vinegar (or apple cider vinegar) *I didn’t use this
- 1 ounce white chocolate chips
I just mixed everything together and baked in a jumbo muffin tin for 22 minutes at 350 degrees. Insert a toothpick to check if its done!
The best part is it uses no butter, oil or eggs!
Jennifer, I’m a fellow WW member. My friends and I go to the same meeting you do and we’ve been having a hard time committing. The e-tools is kind of intimidating to me b/c I’m not very internet savvy. I took a look at your site and I really enjoyed it – it’s nice to hear about the achievements and struggles of someone local.
