
It was awesome! The whole muffin was 365 calories, only 3 fat and 5.8 fiber!
Check this picture, where I opened it up and put a teaspoon or two of smart balance butter on topβ¦can you see the steam rising from it??

Here is the recipe:
- 1 1/2 cups cornmeal
- 1 1/2 cups whole wheat flour
- pinch of salt
- 3/4 cup sugar in the raw (I used regular sugar)
- 3/4 tsp. baking soda
- 1/4 cup apple sauce
- 3/4 cup soy milk or skim milk (I used skim milk)
- 3/4 cup orange juice
- 1 tsp. white balsamic vinegar (or apple cider vinegar) *I didnβt use this
- 1 ounce white chocolate chips
I just mixed everything together and baked in a jumbo muffin tin for 22 minutes at 350 degrees. Insert a toothpick to check if its done!
The best part is it uses no butter, oil or eggs!
Jennifer, I’m a fellow WW member. My friends and I go to the same meeting you do and we’ve been having a hard time committing. The e-tools is kind of intimidating to me b/c I’m not very internet savvy. I took a look at your site and I really enjoyed it – it’s nice to hear about the achievements and struggles of someone local.
