I love reading recipes, reading magazines and searching on-line looking for great ideas. I happened to come across a recipe from www.lowsodiumcooking.com for coffee cake muffins. How yummy does that sound? I adjusted the recipe a bit to make it less calories and fat and I turned out great! The smell that came out of my oven was fantastic!
- 1 ½ cups whole wheat flour
- ½ cup sugar
- 1 tablespoon canola oil
- 1 egg, 2 egg whites
- ½ cup skim milk
- 2 tsp. baking powder
- ¼ cup brown sugar
- 2 tablespoons flour
- 2 tsp. cinnamon
Stir together the flour, sugar and baking powder. Combine milk and egg substitute. Add to dry ingredients and stir until just mixed. In a separate bowl, mix the 2 tablespoons of flour, the brown sugar and cinnamon. Spoon half the batter in a muffin pan coated with cooking spray. Sprinkle the brown sugar mixture over the muffins, reserving enough to put on top. Place the rest of the batter over the muffins and sprinkle with remaining brown sugar mixture. Bake at 350 for 15-17 minutes or until toothpick comes out clean For 9 muffins, the nutritional info is: 160 calories, 2.5 fat and 4 fiber · The original recipe called for regular all purpose flour, and 1 stick of butter and ½ cup of brown sugar.
I changed it to whole wheat flour, 1 tablespoon of canola oil and ¼ cup brown sugar.
The original also said it made 12 muffins, but it looked like I was going to run out of batter, so I made nine instead and adjusted the calories accordingly. Enjoy!
