I was kind of in a hurry this morning, and thought I would only have time to grab a homemade muffin, but I opened my fridge, and saw I had some left over Ore-Ida Hash browns, I know I had lo-carb tortillas and eggs, and decided to make my version of the McDonald’s McSkillet. The McDonald’s version has 625 calories and 36 grams of fat, my version has 300 calories, 13 grams of fat and 8 fiber. It was yummy! And, the best part was that it kept me full all morning, I didn’t have my usual morning snack, so that was pretty cool. Here’s the ingredients:
- 1 Mission lo-carb tortilla
- 1 egg, 2 egg whites
- 1/2 ounce Swiss cheese
- 6 slices of pepperoni
- 1/2 cup cooked Ore-Ida Hash browns.
I coated a small skillet with Pam, beat the eggs, cooked the eggs and added the rest of the ingredients to the pan. Once the outside was cooked, I flipped it over to cook the other side. Once done, I slid it right into the tortilla. I was bringing this to work to eat, so I wrapped it in aluminum foil and it kind of gets all melty inside. I will definitely make this again. Because the hash browns were already cooked, it literally took me only 5 minutes to make. It beats going to the drive thru!
