Has anyone seen this new sweetener at the store yet?
I was picking up a few things the other night, and happened to see this on sale. It’s a sugar free, calorie free sweetener, good for diabetics, and you can actually use it for baking as well. Whenever a recipe calls for sugar, you can replace the same exact amount of Nevella.
So, since you all know I am a muffin fanatic, I decided to try this recipe, and see how it turned out. And, you may also know that I love BIG muffins, so I used my 6 giant muffin tin my Momma gave me to make 6 giant muffins.
The result? FANTASTIC!! I could not taste the difference between sugar and using this sweetener. There was no icky aftertaste, or anything.
Here is the recipe I came up with:
2 cups all purpose flour
1 cup Nevella sweetener
2 tsp. baking powder
1/2 tsp. salt
2/3 cup skim milk
3 TB. Canola Oil
1 tsp. vanilla
1 banana, smashed
2 eggs
6 TB. chocolate chips*
Now, I never mix the wet ingredients and then add the dry. Just dump all that into a bowl and mix for about a minute.
Now here is the important part. Let the batter sit for 10 minutes. This lets the baking powder do its thing and make the muffins nice and fluffly.
I divided the batter into the 6 muffin tins. Then I actually weighed out 1 serving of chocolate chips to each muffin. Then using a toothpick, I just swirled the batter around to incorporate the chocolate chips into each muffin. This way, I knew exactly how many calories each muffin had.
Look at how high they rose!! Each HUGE muffin is 282 calories 10 grams of fat and 1.9 grams of fiber. . Way better than a bakery muffin in my book!
Since this was my first attempt, and since the results were so good, next time I may add egg whites instead of whole eggs, add tofu instead of the oil and see what happens with that.

According to their website the product is made from sucralose. That is what Splenda is made from.
You can also use yogurt or apple sauce as an oil replacement, too!

I’ve been using Nevella since the spring when I saw it on sale pretty cheap at wal mart.
I’ve never seen this sugar replacement….and I didn’t know the trick about letting your batter sit to let the baking soda work…great tip! Where did you get your jumbo muffin tins?

I haven’t heard of it before, but I’ll have to check it out – it’s great it tasted like real sugar! Such yummy muffins too. I like your sitting/baking powder tip, I’ll have to try it!
