If you follow me on Instagram then you know I love to meal prep. It may not be breakfast and lunch every week, but I like to have breakfasts done, because then I can work out for a little before work, get ready and it only takes me a few minutes to make this quick and easy pancake bake.

I made this using Hungry Jack Light and Fluffy Pancake Mix – although any pancake mix would work! It’s a super easy recipe because all you have to do is mix, put in a pan and bake!

Quick & Easy Pancake Bake
Ingredients
- I meal prepped a pancake bake after watching @thepioneerwoman make it on her show.
- I am fan of hers – but made mine more Weight Watcher friendly 🤣🤣
- I used @hungryjack light and fluffy pancake mix (the kind you just add water – so simple easy to make!
- Makes 6 servings-
- 3 points on @blueplan on @ww
- 1 banana, mashed
- 1 single serve fat free Greek yogurt
- 2 scoops vanilla protein powder (optional)
- 1 egg
- 1/2 tsp. cinnamon
- 2 tablespoons chia seeds
- 2/3 cup @hungryjack pancake mix
- 1 serving @lilys_sweets chocolate chips
- 1/2 cup unsweetened almond milk
Instructions
- Mix all the ingredients in a bowl. Transfer to a rimmed jelly roll pan lined with parchment paper or a brownie pan would work too.
- Bake for 20-24 minutes at 400.

I definitely will make this again. It’s freezer friendly too! Just store in a Ziploc bag and place a piece of parchment paper between the layers. Either air fry for 5 minutes at 360 or Microwave for 1-2 minutes.
