I hope everyone is having a great 4th of July weekend so far! We had mostly rain all day yesterday, but it cleared up for the fireworks, so I was happy about that! (and so were my kids!) We ended up grilling in our garage since it was raining, but that was kind of fun! I made the usual burgers, and chicken brats, but we also made Roasted Salsa inspired by Heidi of 101 Cookbooks.
It was really easy!
Here’s what I used: Adapted from 101 Cookbooks
2 lbs. Roma tomatoes, cut lengthwise in half
1 green pepper
1 banana pepper
2 chipotle’s in adobo sauce (these are really spicy!!)
4 cloves of garlic
3 TB. canola oil
salt and pepper
1 medium onion, cut into quarters
Mix all the veggies (except the chipotles) in a large bowl. Mix around to make sure they are all coated with the oil.
Bake in a 350 degree oven for about 30 minutes. Once I took them out, I let them cool for about 15 minutes.
Next, just add them all to a blender (or just chop them if you like a chunky salsa) and add the chipotles in adobo sauce as well.
Blend until smooth. This was about a medium on the spice scale. SO GOOD!
I also made fat free home fries.
Just cut up Russet potatoes (unpeeled) into long french fry strips. Sprinkle potatoes with some chili powder, salt, pepper, oregano and spray with Pam Cooking spray. Spray the cookie sheet too to prevent sticking.
Bake at 375 for about 25-30 minutes, or until the potatoes look crispy and brown.
Here are the burgers and chicken spinach feta brats!! So good!
And the fireworks in our town were great last night!

I still need to try this out! Looks so easy and delicious. I love making homemade home fries. I usually make my own sweet potato fries and spice them up. going to have to try out theses, they look amazing!

pesto is perfectly good to freeze: just remember to cover it with some oil. It’ll be just as tasty when you defrost it!! Make little portions so you can enjoy it yourself π
Some people find the raw garlic taste too overpowering in pesto, I know my family used to, so I started making it with roasted garlic, and everyone loved it! Maybe you can try that to convert your family π

So glad you had a nice 4th–we had a lovely time/bbq, too. Your no-fat fries look fabulous–sometimes I do them with the olive-oil (flavored) spray, which I get at TJs. (BTW, we do not have an ALDI…unfortunately.)
