I almost always bring my lunch to work. Or I should say food to work, because not only do I usually bring breakfast, but my snacks too. This morning, I didn’t really know what to make, so I just kind of threw things together that I thought might taste good, and I was pleasantly surpised! I am calling it my “Southwest Bowl”
- 3 ounces cooked chicken strips (with taco seasoning)
- 1/2 cup brown rice
- 1/2 cup black beans
- 1/4 cup corn
- 1 ounce mexican cheese (or cheddar cheese)
I put it all in a container and then heated it up in the microwave. It was so good! It kept me full all afternoon, I didn’t even have my afternoon snack! Aprox. 489 calories, 10.8 fat and 7.8 fiber I wish I had my camera at work, because I would have taken a picture!!
