The other night, after coming home from work, I had no idea what to make for dinner. I looked in the freezer and saw that I had frozen chicken tenders (boneless and skinless), so I decided to just throw those into a skillet. I was looking at my spice rack and decided I would add a few teaspoons of cumin, a few teaspoons of chili powder and salt and pepper.
After they were cooked through, they smelled really good. On my pantry shelf I had a can of black beans, and I had a red onion, and lite mexican cheese from Trader Joe’s, so I put all those together and wrapped it up in a low carb wrap and it was super filling and yummy!
So my pita had:
3 oz. cooked chicken
1 oz. lite mexican blend cheese
2 tb. red onion
2 tb. black beans
salsa

Had I planned this in advance, I could have added raw spinach to up the nutritional value, or added more veggies, but you can customize this however you want.
