I hate it when you get home from work and look around to see what there is to make, and you fear that there is nothing good in your freezer/fridge/pantry. That’s the predicament I was in. It was late in the week and groceries from the weekend before were almost all gone. I have a mini freezer in my basement, and when I peeked inside, I saw something that I hoped I had the rest of the ingredients to make. Turkey Meatballs that I had purchased from Aldi. 6 big meatballs were only 190 calories, 9 grams of fat and 16 grams of protein:
I then checked my pantry to see if there was any jar of sauce. Nope! But, I did have cans of diced tomatoes and tomato sauce, I could make my own! I had spaghetti, so that was no problem. Here is the sauce I made which was totally deluxe!
- 3 cans of diced tomatoes
- 3 small cans of tomato sauce
- 4 cloves of garlic, chopped
- 1/4 of white onion chopped
- 2 tsp. olive oil
- Italian seasonings to taste
- salt and pepper to taste
- My husband added crushed red pepper flakes and Parmesan cheese
I sauteed the garlic and onion in a little olive oil, added the rest of the ingredients and let it cook for about 20 minutes. My husband baked the meatballs for about 10 minutes in the oven, then we added them to the sauce to heat the rest of the way too. This is what the sauce looked like:
Once the pasta was done, I put a little over a cup of spaghetti in my bowl about 1/2 cup of the sauce and 6 meatballs. It was a really filling dinner too!
My big bowl was 400 calories, 10 grams of fat and lots of protein!
That looks good Jenn! I bet you could make turkey meatball sandwiches with those too!
I’ll have to check them out next time I am at Aldi.
