I am a huge lover of overnight oats, and just oats in general. I’ve made steel cut oats in the past, but was unaware there is a quick cooking variety that cooks in 5-7 minutes! This is the kind I used.
This breakfast is literally ready in 10 minutes. Just add whatever toppings you like.
In a small sauce pan I added 1/4 steel cut oats with 1 cup of water. Bring to a boil and simmer on the lowest heat for 5-7 minutes. At first it will be really liquidy and you think it’s not going to come together, but the oats start absorbing the water and it comes out perfectly.
Topped mine with 1/2 a banana, 1 tablespoon ground flax seeds, 8 grams granola, one tablespoons chopped almonds, and 30 Lily’s chocolate chips. Such a big serving and it kept me full for HOURS, which I love!
I normally like eating a hearty breakfast, lunch and dinner, so I don’t even get hungry in between meals. I am on Weight Watchers, the blue plan, so this whole bowl is 8 points. For my non-Weight Watchers friends, this is 386 calories.
Are you someone who eats the same breakfast over and over? I definitely could eat this every day, but I love also choosing what to make with how fancy I want to make it – like I’m I baking a breakfast pizza? Or do I just want to make something fast.
I’ve been working from home since March 17th, which has been an adjustment for sure to get used to! I work in downtown Chicago – and LOVE the hustle and bustle. Plus my twin sister and I got to see each other at lunch everyday and walk. I miss that so much!
The one thing I do love? No commute – saves me an hour or so each day – and of course I’m close to my beloved kitchen. I think that’s why my strategy of eating higher points/calories at each meal keeps my mind off of what’s in my fridge/pantry all day!
I’ve also in the last few weeks joined an EAT YOUR VEGETABLES challenge on Instagram. The challenge is fill half your plate with veggies and the rest whatever else you are eating. It’s been an eye opener in a few ways. I definitely wasn’t eating enough fruits and vegetables before AND since it takes me so long to chew, by the time I’m doing eating – I don’t want to chew anything else! LOL
I hope you try these oats – I don’t think the quick cooking oats can be used as overnight oats, but I didn’t mind eating a hot breakfast even in the summer.
