This is something I can have virtually every day and never get tired of it!
It’s a lot of chopping, but I just chopped all the veggies: celery, carrot, garlic, red onion, cauliflower, pea pods, broccoli slaw, water chestnuts and sauteed them in a pan until they were crisp tender. Then I emptied the skillet and transferred the veggies to a bowl so I could cook some chicken.
I used about 3 chicken breasts, cut into bite size pieces, and sauteed those until they were just about done, then added back the veggies and cooked for another 5 minutes or so.
Sometimes I make rice, but tonight I just made spaghetti. I cooked a box of spaghetti, so everyone could take some of the pasta, put their veggies on top and add their favorite sauce.
I’ve made my homemade pot stickers before, but I’ve always used the store bought won ton wrappers. I googled pot sticker dough and guess what the dough is??
1 cup flour
1/4 + a few tablespoons of warm water. That’s it!
I mixed the dough in my Kitchenaid mixer for about 3 minutes. Let it rest for 10 minutes.
I pulled about a small ball of dough and rolled it out and filled it with some of the stir fry veggies, then pinch together. Saute in a little oil to brown on both sides, then add about a tablespoon of water and cover with a lid and let them steam. I was surprised how good they turned out!
You can also fill them with cooked ground chicken, some soy sauce and chopped up veggies too!

And that’s a very neat dumpling-like dough you made at the end there.. as for the sauce, I’d try some of the Asian sauces that are used at dim sum restaurants 🙂

This looks wonderful. I have fun throwing ingredients into a blender for a stir-fry sauce. One of my faves is fresh ginger, garlic, oranges, carrots and tamari sauce with maybe a little water to dilute. Add red pepper flakes if you want a little kick.
I love homemade potstickers–never would have guessed how easy it is to make the dough.
The stir fry sauce I like the best is a low-cal spicy, peanutty sauce from the Biggest Loser Cookbook (the original cookbook–I use the ingredients featured in the chicken lettuce wraps). It’s:
3 TBS sherry
2 TBS hoisin sauce
1 TBS peanut butter
2 tsp lite soy sauce
2 tsp hot pepper sauce (I use the chili garlic sauce you can find in the Asian food section)
2 packets Splenda
Whisk it and toss it on whatever you’re making (fried rice, lo main, dipping sauce for chicken skewers, etc.). Sometimes I add minced fresh ginger.
