This recipe actually comes from the Biggest Loser cookbook. Last week I made a breakfast sammy pretty much every day for breakfast and this week I am going to make my own breakfast patty to add to it..
I’ve been using The Arnold Thin bread, 1 “fried egg” (cooked with Pam cooking spray) and 1 slice swiss cheese. This week I will add these breakfast sausages to make them even more deluxe!
Turkey Breakfast Patties
Fennel seeds lend zip to these very low-fat, tasty sausage patties
12 ounces lean ground turkey breast
1/4 cup onion grated (my sister Biz won’t add this!)
1/4 cup fat-free egg substitute
2 tablespoons seasoned bread crumbs, low-fat
1/4 teaspoon fennel seeds finely chopped
In a bowl, combine the turkey, onion, egg substitute, bread crumbs and fennel. Shape the turkey mixture into 4 patties.
Coat a large nonstick skillet with nonstick spray and warm the skillet for 1 minute over medium heat. Add the patties and cook until theyre browned and no longer pink, about 5 minutes on each side.
Yield: 4 Servings; Serving = 1 patty

I love sandwich thins, and the Thomas’ bagel thins, after all its not the bread I’m after in a sandwich. My favourite healthy breakfast is oatmeal with either dried cherries and a bit of cherry jam or strawberries and cream (non fat greek yogurt).
I like oatmeal, cereal, and greek yogurt messes, but once and awhile, breakfast sammichs are SO good!
I do love me a diner breakfast once & awhile too – nothing beats that!
I still havent tried the arnold thin bread with the husband.
Why do I imagine him scoffing 🙂

I have tried the Trader Joe’s version of these and love how thin they are. Just enough to hold the insides of the sandwich without taking away from the flavors. Hmm my favorite filling breakfast is not very healthy. Sausage gravy over biscuits.
