So, after trying to get more fruits and veggies in, I didn’t do so hot over the weekend. I ate better, but I did NOT get all the servings I needed, so on Monday, I was back on.
One thing I am noticing by eating more fruits and veggies is that it REALLY fills me up! So much so, that I am not having cravings for bad stuff. I STILL haven’t had any Halloween candy and I didn’t even have candy that was on the counter at work.
I started the day with this fantastic breakfast:
I’ve had these waffles in my freezer for a while, but never seem to eat them and it was a quick breakfast to grab. I looked in my freezer to see what fruits I had, and saw a bag of frozen Marion Berries. So I had 1 cup of that, and 1 banana and I added both of those to a small saute pan and just heated it up enough so that the berries weren’t frozen anymore. Once I got to work, I toasted my waffles and then poured the fruit over them. You don’t even need syrup!! 4 servings of fruit.
These were the waffles I had. At Aldi grocery store, which is a discounted store with great buys, they have a whole line of “Fit and Active” brand foods which are healthy. 2 waffles only 200 calories, but 6 grams of fiber.
During lunch, my coworker and I went on a brisk 30 minute walk. When I got back from work, I had errands to run for work, so I didn’t eat lunch until 2:00, but I wasn’t even that hungry, so that was okay.
And, since I liked it so much last week, I had the last of the Trader Joe Noodle Bowls to which I added 3 potstickers and green beans and edamame. I couldn’t even eat all of it!
For dinner, I had to run to the store, and my car is in the shop, so my Mom came to my rescue and picked me up from work, and we went to the store. I was planning on making tacos for dinner, one of my families favorites!
When I was heating up the tortilla, I didn’t even realize the kind of flour tortillas I got were 135 calories EACH! What? I didn’t want to waste that many calories, so I made my tacos into lettuce wraps instead:
I had 4 oz. of taco meat, onions, broccoli slaw, some black beans, a little cheese and lots of hot sauce and salsa. It was messy, but so good. I didn’t miss having tortillas at all!
So, I am hoping that this will lead to more weight loss this week. I’m down 14 pounds and I am so close to being in the next set of numbers down on the scale (a set of numbers I have not seen in a LONG time!) I am going to try my hardest to get there this week!

Oh holy smokes! That just goes to show that it always pays to look at the label. I would have never guessed – I wonder what in the world they would put in there to make a thin little tortilla be 135 calories?!?!??? The lettuce wraps look delicious and give you another serving of veggies! π Great job on this challenge!

I have totally succumbed (and am a little hurting the wallet but youll have that and its only temporary :)) to getting party platters of veggies and leaving em in the fridge and grabbing a handful of the raw EVERY time I walk past!

Great idea with heating up the frozen berries – will have to try it. And go you for having lettuce taco shells instead of the high-calorie flour tortillas! Your diligence will surely pay off – I’m rooting for you to have a great weigh-in, Jenn!
