Today’s eats were amazing! And I’m going to share a few things that I eat on the regular too. My favorite thing about eating healthier is when I can make things that are super tasty – not complicated – but super filling! My first meal was at noon today. I wasn’t hungry until then so that’s when I decided to make lunch.
The only thing I knew I wanted was air fried potatoes. I got yellow gold new potatoes, and I love crispy potatoes! Then I looked in my fridge to see what I had to go with that. I immediately saw a bag of baby bell peppers, looked in my vegetable drawer and had red onion. Then I remembered I had a bag of roasted corn in the freezer as well as black beans. And to make it even more deluxe I had half an avocado and salsa! Perfection. This turned out so awesome – I will definitely make it again!
Lunch!
To make the lunch quicker – I took 4 baby potatoes, cut them into quarters and microwaved them for 2 minutes (this makes sure they are cooked through when air frying).
Place the potatoes in the bottom of the air fryer basket – add 4 baby bell peppers, sliced. Add 1/4 of a red onion sliced, 1/2 cup black beans, and 1/4 cup frozen fire roasted corn. I sprayed everything with cooking spray. Add 1/2 tsp. cumin, salt and pepper and 1/2 tsp. paprika. Stir to combine the vegetables with the spices.
Air fry at 400 for 10-12 minutes, stirring a few times. The air fryer I have been using pretty much on the daily for the last six months is from Cosmo Brand. It’s small – perfect for one or two servings of food, which is great if it’s only me I’m cooking for – not a huge clean up.
Once the vegetables were cooked and the potatoes were perfectly browned. I took a large bowl, added mixed greens on the bottom, some salsa, topped with the vegetables and the sliced avocado on top. Chefs Kiss! The best part was it was only 4 personal points for me + I got to add a point for the vegetables. Winning!
The next time you go to Aldi Foods – get this salsa! It’s so good and ZERO points! I dressed the mixed greens with it, and topped my vegetables – which made it taste even better!
Snack Time!
Quest bars are my absolute favorite! If you haven’t had them, they basically taste like a candy bar, most flavors are 180 calories for the whole thing and 6 personal points (worth it!). My afternoon snack consisted of 1/2 oz. of raw almonds – a honeycrisp apple with cinnamon and the Quest Bar. The bars are a little pricey – my local convenient store sells them for $3.00 so I don’t get them all the time, but love when I have them!
My snack was 11 personal points. I have to count points for the apple! Worth it!!
Dinner!
Grilled chicken from grilling over the weekend continues! This was a no cook dinner, because we just sliced up the cold chicken breast, put some cheese on it and a bun with some pretzels and that was as fancy as my dinner was! LOL
The bun I used is Dave’s Killer Bread – it’s 5 personal points but so good! The cheese I used was light jarlsburg cheese – it’s like swiss cheese – definitely look for it at your deli – it’s 1 personal point per slice and as you can see, it’s super melty! Great for grilled cheese too!
The chicken sandwich with prezels is 9 personal points for me. So that makes my daily points of 24. I may have a snack later – but at the moment I’m still full – so we’ll see!
